How wide do most people make their neck mortise?

Yep, 3/4" seems to be standard. Martin M/T necks and three CNC suppliers that I know of use 3/4".

I use the 3/4 tenon.
Barrel bolts are no problem. If you can't find the exact size you can grind the ends a little, you might need to hacksaw the screw slot a little deeper if you do that so you can still get the bolt-hole lined up correctly.

For anyone who is having trouble finding the hardware locally- The Lowe's in my town seems to have a better assortment of fasteners than Home Depot but did not know what a barrel bolt was. After much sifting through the hardware drawers, I found what I was looking for. They were labeled as "cross dowels".

...or just mill the mortise and tenon a little wider to provide clearance. ;)

Yup.
I pretty much lay out every guitar as I go.
You can modify the approach to fit the hardware if you want.
Or you can make the neck tenon how you want it and modify the hardware to fit it instead.
It's a very flexible approach.

Filippo doesn't have a tenon. Or, it's very small. I don't know, I haven't seen it.
